We love our grilled cheese sandwiches around here. From the simplest – bread, cheese, a hot pan and butter – to all sorts of complex concoctions, no one in my family ever says no to this simple and simply satisfying sandwich.
Now, we were asked to choose either Deli American Cheese or 4 Cheese Italian Blend for our grilled cheese recipe, but when it comes to cheese choices, we are a bit divided here. While Bill, Alex and I all love the blend, Julia is a purist and prefers the original American version.
She loves to help me cook, and she’s quite handy with a spatula, the perfect assistant for this little project.
First, she assembled her sandwich…
Then she grilled it (in a hot pan, with butter, go figure!) all by herself.

A few minutes on one side, a bit more butter, a quick flip, and Julia was done. Golden brown, melty perfection:

He’s a huge fan of complex flavors, and the combination of Asiago, Parmesan and Romano fits the bill in that department. Crisp, delicious bacon surrounded by melty cheese and gloriously golden brown bread. That’s what makes Alex happy.
So happy, in fact, that when the sandwich was ready, Alex told me how I should set up one of the shots.
“You should put the sandwich on one of your prettiest plates, cut it in half, and with a glass of milk or orange juice next to it. Then take a picture of it, looking down. No, really Mom.”

While all this was going on, my husband was being uncharacteristically patient. At last, it was his turn. He chose to see Alex’s grilled 4 Cheese Italian Blend and bacon and raise it an avocado…
…with firmer, chewier Italian bread as well. Thicker sandwiches need sturdier bread, in our experience.
“Will the cheese melt?” my husband asked. “I mean…isn’t the avocado kind of cold?” I looked at him, decided he was delusional from hunger, and ignored the question. Of course it would melt!
Experienced as I am in the Art of the Grilled Cheese, I have figured out how to make sure the cheese will, indeed, melt.
Here’s my trick:
I grill the sandwich on one side first, then flip it over, reduce the heat slightly, and put a lid on the pan. This helps with thicker sandwiches or with sandwiches made with thicker, denser breads.
I took exactly two pictures before Bill yanked the plate away from me and ran to another room.
Finally my turn!
I have to confess I’d been trying out various combinations in my mind all day, but in the end, this is what I wanted:
Yep. A fried egg.
Two extremely yummy sandwiches: fried egg and grilled cheese, all in one!
First, I fried the egg (I like mine just barely over easy) and then I moved it to a plate so I could start the grilled cheese (and bacon) part. Once the cheese was starting to melt, I put the egg on top of the bacon, finished assembling the sandwich in the pan, and once more used my Put-the-Lid-on-It trick to make sure everything was perfect.
